Ingredients
· 1 big pack of fresh spinach ( finely chopped )
· 1 paneer Block cut into cubes
· 1 onion Finely chopped
· 2 Fresh tomato chopped
· Fresh cream
· water
· 4 tbsp oil
· 6 cashews
· 1 tbsp kasoori methi -dried fenugreek leaves.
· 1 tbsp garlic ginger paste
· ½ tbsp lemon juice
· 1 tsp cumin seeds
· 1/2 tsp turmeric powder
· 1 tsp Kashmiri red chili
· 1 tsp ground coriander powder
· 1 tsp garam masala
· 1 tsp salt and 1 pinch of sugar
· Add 2 tbsp oil to the pan, once oil is heated up add cumin seeds followed by the chopped onion. Once the onions get translucent, add ginger and garlic, let this cook for 1-2 minutes
· Add cashews and tomato and Once the tomatoes are wilted, add your spices. Cook them for 5 minutes and then let them cook.
· Using a blender, blend until a smooth paste.
· Turn the heat to low and add the chopped Spinach, paneer and heavy cream and mix well. Cook them until spinach gets cooked. Uncover, add the lemon juice, give it a good mix and serve it up hot.
